Located in the village of Treiso in Piedmont, Ca' del Baio is a winery founded in the 1920s and now run by the third and fourth generations of the Grasso family. The estate extends over 30 hectares of vineyards. Production focuses primarily on Nebbiolo, but also includes other local and international varieties. The Moscato Bianco grapes are sourced from a vineyard located in cadastral plot 101 in the Tre Stelle area. Here, the vines, planted between 1953 and 1994, on calcareous-sandy gray marl soils, enjoy varied exposures. After harvest, fermentation takes place in pressure tanks until it reaches 5% alcohol, then is interrupted by cooling, and the wine remains on the lees for two months. The result is a sweet and delicate wine that reveals a bright straw-yellow color in the glass, enhanced by a fine and persistent perlage. On the nose, this Moscato d’Asti reveals the full aromatic character of the grape variety, opening with fruity notes of apricot, mango, and peach, along with hints of lime blossom. On the palate, it is lively, deliciously sweet, and fresh, with a well-balanced acidity and a pleasant creaminess. The finish is citrusy and persistent. Thanks to its low alcohol content and its light, fragrant character, it is the ideal wine for brunch. It pairs well with fresh fruit desserts, classic Italian Panettone, and brioche, but is also excellent with light Asian recipes, fresh cheeses, and cured meats.
