Drink now or cellar for up to 5 years. Serve chilled. The little village of Capcanes in Spain’s Priorat region has been making wines since the 13th century. In 1933 five local families banded together to found a cooperative where they could vinify their grapes collectively. Over the years the Celler de Capcanes has become one of Catalonia’s most successful with many more families opting to join in. This is the cooperative’s Reserva Cava which is crafted using the traditional method of secondary fermentation in the bottle that’s also used for Champagne. The cuvee is composed of 50% Macabeu and equal parts Xarel·lo and Parellada grapes with 30 to 36 months of ageing in the bottle on the lees. In the glass you’ll immediately notice the delicate stream of bubbles and enchanting aromas of toasted almonds, ripe peaches, apricot, and apple blossom. The 7.3g of residual sugar gives this bubbly just a touch of sugar which complements beautifully the ripe orchard fruit flavors on the palate and the mouthwatering freshness on the finish. A great Cava to enjoy as a refreshing aperitif before a meal or alongside lighter dishes like seafood, grilled fish, sushi, or leafy green salads.
