Drink it now or cellar for up to 10 years. No need to decant. Located in Bouzy, the family-run champagne house Pierre Paillard was founded in 1946. Its history dates back to the 18th century when the family purchased the first vineyards in this prestigious Grand Cru appellation. Today the estate, which extends over approximately 11 hectares of vineyards divided into 30 parcels, is managed by Antoine and Quentin, the eighth generation of the family. The Pinot Noir and Chardonnay grapes for this elegant champagne are selected and obtained from 22 parcels located in Bouzy, one of the historic crus of the Montagne de Reims area. Fermentation takes place with indigenous yeasts and the wine is then left to rest on the yeasts for 3 years. Champagne Les Parcelles Grand Cru Extra Brut is a wine with an intense and brilliant color with golden tones embellished with a fine and persistent perlage. On the nose, it is fragrant and lively with aromas of white flowers and Mediterranean herbs and then hints of yeasts and brioche. On the palate, it is lean and fresh, elegant and smooth with a marked mineral vein and a finish that recalls salty hints. It is perfect with deep-fried appetizers, seafood, and all fish. For a special treat, try it with prawn tempura.
