Originally known as Gillet, Domaine de la Bongran is a family-run French winery located in the Viré-Clesse wine district. The Thevenet family name first appeared in 1904, and today Gautier Thevenet manages the estate. The Domaine de Bongran's vineyards are rooted in Oxfordian white marl and upper and middle Bathonian limestone, characteristic of the Quintaine. The unique terroir, family traditions, and great respect for the soil and nature are reflected in Chardonnay wines of great elegance and aromatic richness, capable of aging well. The wine pays tribute to the figure Emilian Gillet, Gauthier's ancestor, and is produced with very ripe Chardonnay grapes harvested from vines over 45 years old. Fermentation occurs spontaneously with indigenous yeasts, and the finished wine then ages in resin vats for 12-18 months. In the glass, Vire-Clesse Quintaine Emilian Gillet reveals a delightful aromatic exuberance with fresh notes of citrus, pear, peach, and wildflowers over a delicate mineral undertone. On the palate, it is broad and generous, refreshing and juicy, with a pleasant minerality and a rich, long finish that recalls light buttery notes. Try it with scallop risotto, prosciutto and melon, or turbot fillet in lemon sauce.
