Located in the village of Santenay, in the Côte de Beaune, Domaine Jessiaume was purchased in 2020 by Dr. Jean-François Le Bigot, a biomedical researcher with a passion for wine. The estate encompasses approximately 15 hectares of vineyards cultivated using organic and biodynamic methods. The Chardonnay grapes come from the Premier Cru Les Ecussaux vineyard, organically farmed and bordered by a stream in the lower section. Here, the vines, averaging 30 years old, enjoy east-southeast exposure and grow on marl-limestone soils. After manual harvesting, fermentation takes place in oak barrels, and the finished wine ages on the lees for one year and then for an additional 4-6 months in tanks before bottling. The result is an expressive and generous wine, revealing a bright, light lemon color in the glass. Its aromatic profile is fresh and lively with fruity notes of pear and white peach, mineral and floral hints, and some buttery touches. On the palate, it is broad and deep, with a creamy, smooth texture and a perfect balance of minerality, freshness, and roundness. The finish is long and elegant. Try it with veal escalopes, shrimp soup, or pork tenderloin in apple sauce.
