Merchant's description

Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. The Emidio Pepe winery in Abruzzo was founded in 1964, but boasts a family winemaking tradition dating back to the late 19th century, when Emidio's grandfather began producing wine for the family. Today, the company is recognized as one of the most prestigious in the region, thanks to its excellent natural wines, made using biodynamic methods and a minimal-intervention philosophy. Trebbiano grapes come from the estate’s vineyards, spread between the sea and the mountains. The vines thrive in clay-limestone soils that favor the development of a distinctive mineral backbone. After harvest, the vinification takes place traditionally, with the grapes pressed by foot (as was once the custom) and fermentation in glass-lined concrete tanks, where the wine then ages for several months before bottling. The result is a rich, elegant, and layered white wine, capable of aging beautifully for several years. In the glass, the wine reveals a dense, straw-yellow color and a broad, complex aromatic profile with fruity notes of white peach and medlar, followed by hints of aromatic herbs such as wild fennel and rosemary, with touches of honey and wildflowers. On the palate, it is rich, layered, and savory. It has a pronounced minerality and good structure. It is powerful, expressive, and characterful, with a long, almost savory finish. It pairs perfectly with pasta with fish roe and Burgundy-style snails.
