Here, the soil and climate conditions are extremely favorable for quality viticulture, and vines have been cultivated since the times of the Roman Empire. The estate extends across approximately 40 hectares of land, encompassing a single vineyard, where international grape varieties are grown. The award-winning Erdevik Ex Cathedra Sauvignon Blanc is an exceptional single-varietal white wine produced with grapes sourced from the estate's vineyards, planted in 2000 on alluvial soils with clay and limestone. After vinification in temperature-controlled stainless steel, the wine ages for 10 months in 500-liter oak barrels (half of which are new) before bottling. On the nose, the wine reveals a pure and broad aromatic profile with notes of ripe citrus, nectarine, passion fruit, and lemon zest, followed by floral and mineral hints. On the palate, it is crisp and expressive, elegant and powerful, with a vibrant character and lively acidity. It has a pleasant fruit concentration and a distinctive minerality that lingers on the long finish. Try it with pesto lasagna, asparagus risotto, fried artichokes, and grilled fish.
