Drink it now or hold it for a couple of years. No need to decant. Serve it chilled at 10-12°C. Born from a joint project of the Gaja and Graci families, the Idda winery specializes in the production of volcanic wines on the southwestern side of Etna. Its name is already a tribute to the volcano, in fact, it recalls the nickname that locals use to define Etna. Today the winery is spread over 20 hectares of vineyards, located between 600 and 800 above sea level, in the municipalities of Belpasso and Biancavilla. Idda Bianco comes from 100% Carricante grapes that come from vineyards located in the municipalities of Biancavilla, at an average altitude of 700-800 m above sea level, and of Belpasso, at an average altitude of 600-700 m. After fermentation of about three weeks, the wine rests for 12 months partly in oak barrels and partly in steel. The wine has a sweet and fragrant scent, with aromas of flowers, almonds and marzipan and hints of herbs and flint. On the palate, the Idda Bianco is fresh and mineral with a savory note, and a fresh acid vein. It is elegant and refreshing and pleasantly fruity. Pair it with seafood appetizers, sushi, shellfish and grilled fish.
