Located within the historic area dedicated to the production of Gavi DOCG, La Bollina, for centuries the residence of the Marquises Figari of Genoa, extends into a landscape made up of gentle slopes, selected vineyards and chestnut woods. Inside the estate, in addition to the farm and the well-equipped production cellar, there are three elegant accommodation facilities: an Art Nouveau villa transformed into a 4-star luxury hotel with an adjoining park and adjacent Congress Center, a modern 4-star hotel and, for golf enthusiasts, a 9-hole course that winds through the vineyards where the wines are produced. The cellar, completely renovated, now has the most modern winemaking techniques. The Gavi Ventola comes from Cortese grapes vinified in purity. Cortese is an indigenous vine, which has been cultivated since the eighteenth century in the areas of Serravalle Scrivia, where the winery is located. The grapes, carefully selected during the harvest phase, undergo a short maceration, before being softly pressed and alcoholically fermented in steel. The wine then remains in steel to refine for a few months, before being bottled and marketed. This intensely yellow wine shows aromas of jasmine and almond blossoms, accompanied by slight hints of pear, yellow peach, and vanilla. The acidity is good and provides freshness, contrasting and balancing the natural softness of the slight over-ripening of the grapes. It will be great with shellfish, raw fish and white meats.
