Cellar for up to 5 years. Serve chilled. This racy Gavi opens with refreshing notes of citrus, peach and stony minerality while the first sip reveals a mouthwatering acidity, light body and pure, clean finish. The must is fermented in stainless steel tanks to preserve the vibrant natural character of the Cortese grape and produce a light and elegant wine. The bright flavour profile makes this a great choice to enjoy as an aperitif or alongside seafood, fish or tomato-based pasta dishes as well as charcuterie and cheeses. The grapes for this delicious white are grown biodynamically without any herbicides or pesticides on the Ravi estate which is set in the heart of Gavi’s rolling hills. The estate was purchased in 2003 by the Rossi Cairo family who have worked hard to restore biodiversity and nurture the local ecosystem. Wherever possible the estate seeks to work in harmony with Mother Nature and has been Demeter-certified since 2007. They aim to produce the very best quality grapes possible which in turn allows them to craft top quality wines from indigenous local grape varieties. Winemaking on the estate is overseen by Piero Ballario who consults for many excellent small Italian wineries based in the Langhe and beyond.
