Louis Michel & Fils has been embedded in the scenic Chablis landscape since the 19th century. They have a tremendous portfolio of vineyards, including a smattering of Premier Crus. “Montmain” is an early-ripening vineyard lying on a clay hillside, which bestows its wines with an elegant, racy character. This particular wine was sourced from 4 different parcels of land on the left bank of the Serein River. It is 100% Chardonnay, bursting with aromas of ripe, sweet citrus fruits and green-skinned apples. The palate is focused and carries no dead weight - look for lively notes of candied lemon, orange and pear, supported by a classically “Chablis” vein of minerality. You can also discover hints of almond and yeast, gained from spontaneous malolactic fermentation. The grapes spend up to 16 months in stainless steel tanks before being bottled. Serve it slightly chilled alongside an elegant fish dish or a hard cheese such as Beaufort.
