Founded in the 1960s and now run by Stéphane and Bénédicte Tissot, Domaine Tissot is one of the leading producers in the Arbois and Côtes de Jura appellations with 50 hectares of meticulously tended organic and biodynamic vines. This wine is produced from 100% local variety, Savagnin, from AOC Arbois and is oxidatively aged “sous voile” i.e under a thin veil of flor. It is a distinctive style of wine exuding beautifully bright citrus fruits and spices, with a nutty, savoury streak reminiscent of sherry. Light-bodied, savoury, tangy and complex, this pairs particularly well with fish dishes but also with local aged cheeses, such as Comté.
