Founded in the 1960s and now run by Stéphane and Bénédicte Tissot, Domaine Tissot is one of the leading producers in the Arbois and Côtes de Jura appellations with 50 hectares of meticulously tended organic and biodynamic vines. This wine is produced from local variety, Trousseau, sourced from five plots across AOC Arbois with vines planted between 1930 and 2002. Bottled with minimal sulphur and without filtration, this is wild and pure, offering up notes of griotte cherry, raspberry, spices and a distinctive herbal streak. Lighter-bodied, yet full-flavoured and with lightly grippy tannins, this would make a lovely accompaniment to a plate of assorted charcuterie and cheeses.
