Vincent Paris is a talented French winemaker from the Rhône Valley who manages 10 hectares of vineyards, including six in the Cornas appellation and two in the Saint Joseph appellation. From his vineyards, Vincent produces wines of great purity, with fruity aromas, which are accessible from a young age, but can also age beautifully for many years. The Syrah grapes for this Cornas come from 3 hectares of young vines with an average age of 15 years, located on granite slopes with a 30% inclination. After harvesting, the grapes undergo cold maceration for a week. Fermentation takes place without the addition of yeasts at a controlled temperature. The wine is aged for 3 months in vats and then a year in oak barrels aged between 2 and 8 years. The result is a wine with an accessible character from its earliest years but with excellent aging potential. The Cornas Granit 30 by Vincent Paris shows a very intense red color. The aromatic profile is fresh and intoxicating with aromas of dark fruit and spices. On the palate, the wine is round with silky tannins and a long, spicy finish. It is the perfect wine for risotto with mushrooms and grilled red meat.
