Angel's Estate is one of the most renowned companies in Bulgaria, located in the immediate vicinity of the Zhrebchevo Dam. Here the company, which extends over 100 hectares of vineyards, grows red varieties such as Merlot, Cabernet Sauvignon, Cabernet Franc, and Syrah and white varieties such as Chardonnay, Sauvignon Blanc, and Gewurztraminer. The red varieties represent approximately 70% of the crops. The vineyards were planted between 2007 and 2008, on soils of heterogeneous composition (sandstone and clay-limestone). The Stallion Classic is a predominantly Cabernet Sauvignon blend, with additions of Cabernet Franc, Merlot, and Syrah. The harvest is manual and after vinification, the finished wine is left to refine in new French oak barrels for about 10 months, in the estate's underground cellars. The wine has a deep, dark red color with some purple hues. Its aromatic profile is intense with notes of red fruits and spices and some toasted hints. On the palate, it is full and soft, rich and balanced. The tannins are silky and perfectly integrated. The finish is long and persistent and recalls spicy notes. It is ready to drink immediately but can age beautifully in the cellar for a few years. It is the ideal wine with grilled red meat or roasts.
