The Chilean De Martino winery is a family business, run by the eponymous family of Italian origins for four generations. Founded in 1934, the company quickly established itself as one of the finest in South America, thanks to its excellent production of quality wines with excellent value. The Cabernet Sauvignon grapes come from a single vineyard located on Maipo Island, characterized by gravelly alluvial soils. After manual harvesting and complete destemming, fermentation takes place with indigenous yeasts in steel vats, and the finished wine ages for two years in 2,500-liter barrels before bottling. De Martino La Cancha Cabernet Sauvignon is an intense and elegant wine, ready to drink now but also showing excellent aging potential. Its aromatic profile is expressive and complex, with notes of blackcurrant and small, ripe red berries, intertwined with hints of violet, tobacco leaf, and graphite. On the palate, the wine is round and concentrated, deep and smooth, with firm, soft tannins and a distinct acidity. It is a very balanced wine with a moderate alcohol content and a long, fruity finish. Excellent with kebabs, roast beef sandwiches, or Brazilian feijoada.
