Cellar for up to 20 years. No need to decant before serving. This is a pale white Burgundy, with hues of green in the glass. It begins with an elegant nose, with hints of white flowers, wet slate, and white pepper. The grapes came from Chardonnay vines with an average age of 55 years, planted in nutritious clay and limestone soils. Les Perrieres is a famously small-scale vineyard, defined by steep and difficult-to-reach slopes. A Burgundy staple, Domaine Henry Boillot is located between the appellations of Puligny-Montrachet and Volnay, two well-regarded regions that serve as the origin of most Boillot wines. The winery was founded in 1885 by Henri Boillot’s grandfather, and has been practicing minimal intervention winemaking since the 1990s. On the palate, mineral notes of slate and salinity prevail, along with citrus zest, white flower blossoms, and orchard fruits. It is stunningly pure and steeped in bright acidity, with a minimal presence of oaky tannins, perfect for those who enjoy incisive, crisp white wines. It was aged in oak before release, with half of the barrels being new. Best when served slightly chilled, this Premier Cru is ideal for pairing with delicate fish dishes, soft cheese, or white meat.
