Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. The prestigious Domaine Guillon et Fils is a family-run Burgundy winery established in 1980, and today led by its founder Jean-Michel and his son Alexis. The estate, which initially had around 2 hectares of vineyards, now extends over 40 hectares, spread across the various appellations of Mazis, Gevrey-Chambertin, Morey, and Clos-de-Vougeot. Made with selected and hand-harvested Pinot Noir grapes from the Premier Cru Les Champonnets, this red reveals all the elegance typical of the wines of Domaine Guillon. The rich limestone and marly-limestone soils of the region, combined with the care and meticulous work in the vineyard and cellar, and the aging in new oak, give it complexity, depth, and excellent aging potential. In the glass, the Gevrey-Chambertin Premier Cru Cuvée Les Champonnets displays a brilliant color with deep ruby tones. Its aromatic profile is broad and complex with notes of red fruits, spices, and undergrowth. On the palate, it is full-bodied and round, vigorous and fresh, with smooth tannins and a good concentration of fruit. It is balanced with a long and persistent finish characterized by spicy notes. Try it with a Coq au Vin, traditional French escargots, or Beef Bourguignon.
