The Mitolo family emigrated to Australia in the 1950s, and in 1999, Frank Mitolo decided to establish his own winery with the support of Ben Glaetzer. The company, located in McLaren Vale, produces a wide range of award-winning wines from international and Italian grape varieties. The Shiraz grapes are sourced from Lots 10 and 11 of the Lopresti vineyard, located in the prestigious Whites Valley subzone, a few kilometers from the coast. Here, the vines are rooted in the black Biscay clay with calcareous deposits in Lot 11. Thanks to the proximity of the ocean, breezes moderate the temperature, creating ideal conditions for the slow ripening of the grapes. After harvest and temperature-controlled fermentation, the wine rests for 20 months in a mix of new (60%) and used barrels before bottling. The wine's name is inspired by the mythical dragon Savitar. In the glass, the wine reveals a dense, dark garnet red color. Its aromatic profile is intense and complex, with notes of blueberry, cherry, plum, and blackberry, followed by hints of cedar, aromatic herbs, roasted coffee, and pepper. On the palate, it is powerful and concentrated. It has a full body, firm yet well-integrated tannins, and a lively, well-balanced acidity. The finish is long, rich, and spicy. Leave it in the cellar for a few years or try it now with beef brisket.
