Drink it now or cellar for up to 5 years. No need to decant. The Albert Bichot winery has been based in Beaune since 1912. Its history is closely linked to the family tradition of the Bichot family, which has been rooted in Burgundy since 1350. But it was at the beginning of the 1900s that the company began to get noticed on the international markets and in 1937 the Maison became the official supplier of the court of Sweden. This legacy has been passed down from father to son over the years and, since 1966, Alberic Bichot (sixth generation of the family) has been running the business. Albert Bichot's Chablis is produced from Chardonnay grapes deriving from different parcels distributed over a total area of 40 hectares. Here the vines benefit from Kimmeridgian clay-limestone soils, which give this cuvée an exceptional complexity and structure. Fermentation takes place in stainless steel vats, as well as the refinement which has a duration of 10 months, on fine lees. This Chablis has a clear and crystalline pale yellow color, with slight greenish reflections. On the nose, the wine reveals citrus and white flower aromas with mineral notes typical of Chablis. On the palate, it is lively and lean, with great freshness and notes of almonds and minerals that open on the long and persistent finish. It is perfect as an aperitif, but its marked minerality makes it ideal with fish and seafood and also with sushi.
