Merchant's description

Drink it now or cellar for up to 3 years. No need to decant. Founded in Burgundy in 1971 by over 70 local winemakers, the Bailly-Lapierre cooperative has grown significantly over the past 50 years, now comprising over 430 members. Today, this renowned wine-coop produces over 3.5 million bottles and is widely recognized internationally for the excellent quality of its Cremants de Bourgogne. The majestic aging cellars, carved into the stone between the 12th and 19th centuries, lie 52 meters below ground, ensuring ideal conditions for wine aging. The Chardonnay grapes are selected and harvested by hand. Fermentation takes place in stainless steel, and the finished wine then ages for 16 months on its lees, developing elegance and aromatic complexity. In the glass, the wine displays a straw yellow color, brightened by a fine and persistent perlage. Its aromatic profile is broad, delicate, and refined, with notes of apple, pear, and pineapple, and hints of wildflowers, over a background of fresh bread and chalky notes. On the palate, it is fruity, fresh, and balanced, with a bold acidity and a long finish that recalls notes of white fruit. Enjoy it as an aperitif with seafood appetizers, vegetable tempura, cured meats, and seafood salads.
