Bedoba is a Georgian winery, founded by Nugzar Ksovreli together with Swiss wine entrepreneur Thierry Fontannaz, in collaboration with the Konchoshvili family winery. Bedoba Rosé Kakheti is a natural rosé produced with Saperavi grapes sourced from vineyards in Kakheti, eastern Georgia. This ancient winemaking region, considered the most important in Georgia, enjoys a climate characterized by good temperature ranges between day and night. The heat of the day favors the ripening of Saperavi, while the coolness of the night ensures the full development of its aromatic richness. The deep, black slate soils result in highly concentrated grapes. After manual harvesting and cold fermentation, a small portion of the wine ages in French oak. This step adds structure without impacting the wine's fruity freshness. In the glass, the wine reveals an intense, brilliant color with rosé hues and a broad aromatic profile that combines notes of pomegranate, wild strawberry, and blackcurrant with hints of Mediterranean herbs and flowers. On the palate, it is fresh, lively, and refined. It has a creamy texture, juicy fruitiness, and bright acidity. The finish is long and refreshing. Try it with grilled shrimps, tomato tarte tatin, salmon carpaccio, or sushi.
