Drink it now or cellar for up to 20 years. It is recommended to decant it for half an hour. Located in the Langhe region of Piedmont, in the municipality of Treiso, Ca' del Baio is a family-run winery with over 100 years of history. The estate is currently managed by Giulio and Luciana Grasso, along with their three daughters, Federica, Paola, and Valentina, the third and fourth generations of the family. The vineyards extend over approximately 31 hectares. Nebbiolo is the main grape, but the company also produces other wines based on indigenous and international varietals. The Nebbiolo grapes are sourced from a vineyard planted between 1957 and 1999 in the prestigious Asili cru. Here, the vines benefit from a southwest exposure and soils composed of bluish marl and calcareous clay, which contribute to the production of highly elegant wines. After harvesting and fermenting in steel tanks, the finished wine ages for two years in a mix of large oak barrels and French tonneaux, followed by a further six months in the bottle. In the glass, Ca' del Baio Barbaresco Asili reveals a brilliant garnet color with orange highlights. Its aromatic profile is broad and complex, with fruity notes of morello cherry and floral hints of violet, followed by nuances of black pepper, licorice, and tar. On the palate, it is full-bodied and soft, smooth and elegant, with a delightful complexity. It has firm, well-integrated tannins and a long, warm, and persistent finish. Try it with roast pheasant and hare stew.
