Founded in 2013 by siblings Simon and Marie Normand, La Borderie is a young Champagne house located in Bar-sur-Seine, born from the acquisition of the family vineyards. Production focuses on vintage wines from single plots to best express the terroir's diversity. The estate covers approximately 11 hectares located in the Côte des Bar, the southernmost section of Champagne. La Confluente is a delicious Blanc de Blancs Champagne, made primarily from Chardonnay and supplemented with a touch of Pinot Blanc. The grapes come from two parcels, Les Devoix, located in Merrey-sur-Arce and Val Moré near Bar-sur-Seine. A small percentage of the wine is vinified in oak barrels, and it ages on the lees for 45 months. In the glass, the wine reveals a clear lemon-yellow color with greenish highlights and a fine, persistent perlage. Its aromatic profile is broad and lively, with fruity notes of lime, grape, and peach, along with floral and mineral notes. On the palate, it has a velvety texture. It is juicy and round, with a refreshing and well-balanced acidity. The finish is long, crisp, and citrusy. It pairs beautifully with oysters, sushi, and goat cheeses.
