The cuvée Royale Réserve Non-Dosé is a blend of classic Champagne grapes (Pinot Noir, Chardonnay, and Pinot Meunier) all coming from Grand Cru and Premier Cru vineyards located in Ay and Mareuil-sur-Ay. The cuvée involves the use of approximately 20-30% reserve wines aged in wooden barrels. After the second fermentation, the wine rests on the lees for 3 years. After disgorging, no dosage is added to maintain the pure expression of the terroir as much as possible.
