In contrast to numerous Châteauneuf-du-Pape producers, Le Vieux Donjon opts not to create a distinct bottling from its old-vine grapes. Instead, the estate crafts a single white cuvée and a Châteauneuf-du-Pape red blend using classic Rhône varieties. The Le Vieux Donjon Blanc is an even blend of Roussanne and Clairette, undergoing a six-month ageing process in stainless-steel tanks before being bottled.
