Located between Toulon and Hyères, Clos Cibonne is an old Provençal winery, which owes its name to Count Jean-Baptiste de Cibon, its former owner. The estate, purchased by the Roux family at the end of the 18th century, extends over 24 hectares of vineyards, dominated by the Tibouren grape variety, an ancient plant, probably originating from Mesopotamia, replanted on the estate in the 1930s by André Roux. This wonderful rosé is a blend of Tibouren and Grenache. The grapes come from parcels located on a hill not far from the Mediterranean sea. Here the vines benefit from a soil composed of clay schist, and sea breezes that guarantee good health of the grapes. After vinification and assembly, the wine rests in old oak barrels for a year. In the glass, the wine takes on a clear color with orange-pink tones. On the nose, it reveals a fragrant aromatic profile with notes of exotic fruit and citrus, ginger and white pepper, and subtle nuances of rose. On the palate, it is tasty and full-bodied, juicy and soft. The finish is long and persistent and recalls spicy notes. It is an elegant wine with a good complexity that can pair well with substantial fish-based recipes or lamb curry.
