Domaine Tollot-Beaut’s Corton-Charlemagne is serious white Burgundy from one of the appellation’s great Chardonnay sites, on the limestone-rich, east-facing slopes of Corton. It’s got plenty going on without being showy: citrus, pear and white peach, with chalky minerality, a touch of flint and some subtle toasted almond. The palate is concentrated but fresh, with bright acidity keeping everything in check and a long, saline finish that really shows the limestone character of the site. A natural match for lobster, scallops or sea bass, particularly with lemon, herbs or beurre blanc. It’ll also work brilliantly with creamy chicken dishes or a good piece of aged Comté.
