Dhondt-Grellet Roc Solare 2021 is a grower Champagne produced from Chardonnay grapes primarily from the Sezanne region. The 2021 vintage was cool and resulted in a base wine with high tension and very bright acidity which is a hallmark of this producer`s style. It is an Extra Brut bottling meaning very little sugar was added at the end of the process to allow the stony mineral character to show clearly. The wine features notes of green apple and white flowers with a very fine and persistent bubble structure from its time ageing on the lees.
