Located in the Alsatian village of Wettolsheim, Domaine Charles Sparr extends over approximately 20 hectares of vineyards distributed around the town with parcels in some of the most prestigious Grand Crus of the region. Jardin d'Eden is a youthful Alsatian Pinot Noir produced with select grapes in the single Vogelgarten vineyard, at about 250 meters above sea level in the village of Sigolsheim. Here the vines, with an average age of 20 years, and cultivated according to organic and biodynamic principles, are rooted in mixed soils of marl and limestone. After the harvest and fermentation with indigenous yeasts in tanks, the wine ages for a year and a half in oak tonneaux. In the glass, the wine reveals a brilliant color with intense ruby ​​tones. Its aromatic profile opens with notes of ripe cherry, red berries, violets, and wild herbs. On the palate, it is rich, lively, and fresh with a medium-light body and a well-balanced acidity. It is juicy with a light savoury vein that extends into the long finish. In food pairings it is versatile: it goes well with cured meats, with fatty fish such as tuna and salmon, and meatballs in tomato sauce.
