Founded in 1972 by Charles Audoin and his winemaker wife Marie-Francoise, Domaine Charles Audoin has been managed by their son Cyril since 2000. Starting with 3 hectares of vineyards, the company now owns 14 hectares that cover some of the best plots of Marsannay. The company's philosophy is focused on the production of wines that are a pure expression of the varietal and their terroir. The resulting wines show very high quality, great freshness, and delicious fruitiness. They are ready to drink in their youth but also have the ability to age gracefully for many years. The grapes are selected and harvested manually. Maceration and racking last from 14 to 18 days depending on the vintage in order not to extract too much material but rather to favor the fruitiness and elegance typical of Pinot Noir. The finished wine is then aged in oak barrels. Domaine Charles Audoin Gevrey Chambertin has a beautiful dark ruby color. Its olfactory profile reveals fruity aromas of strawberry, and blackberry followed by violets. With age, animal notes, hints of leather, and licorice take over. In the mouth, it is a rich, warm, and well-structured wine. The tannins are silky and elegant. The finish is spicy and of good length. It goes well with game, beef, or lamb or with strong-flavored cheeses such as Époisses and Cîteaux.
