Domaine Daniel-Etienne Defaix is located on Kimmeridgian soil, in one of the oldest parts of Chablis. Despite being founded almost 4 centuries ago, the winery is still a family-run business. The domain spans just 28 hectares, but those are planted exclusively with Chardonnay - a statement of intent, and the ultimate sign of commitment to crafting refined wines from this famous Burgundy grape. This is a rich expression of Chablis, with a medium-plus body and a juicy texture that can be rolled around the mouth. The palate is marked with notes of buttered bread, citrus rind, orchard fruits, herbal honey, and a sharp, stony minerality. The Chardonnay grapes were fermented and matured on the lees for 12 months, with regular stirring, imparting a round texture.
