Drink it now or cellar for up to 15 years. It is recommended to decant it for half an hour. Domaine des Sénéchaux is a historic estate located in Châteauneuf-du-Pape since the 14th century. Today, the estate, purchased by the Cazes family in 2006, owns approximately 27 hectares of vineyards, where Grenache is the predominant grape, while white grapes occupy only 3 hectares. This Châteauneuf-du-Pape is a blend of Roussanne, Clairette, Grenache Blanc, and a small amount of Bourboulenc. The most unusual feature is the use of a significant percentage of Clairette (about a third of the blend), which is commonly used much less frequently, lending the wine freshness and elegance. After harvest and vinification, the finished wine rests in a mix of used tanks and barrels. The result is an elegant and lively white with good aging potential. In the glass, it reveals a clear straw-yellow color with light greenish highlights. Its aromatic profile is broad and fragrant, with fruity notes of pear and citrus, floral hints of hawthorn and acacia blossom, and some spicy touches. On the palate, it is round and balanced, generous and vibrant, with refreshing acidity and a pleasant touch of minerality. The finish is long and delicately savory. Try it with lobster or Pad Thai.
