Merchant's description

Jean-Marc Brocard built his name in Chablis from a single hectare of vines in the 1970s, and the estate is now one of the most respected addresses in the appellation. This is its straight Chablis - the wine that shows what the region does at its most honest, without a cru name or a premium price attached. It's grown on the Kimmeridgian limestone that defines true Chablis: ancient seabed soil packed with fossilised marine shells, which is where the wine's saline, stony character comes from. Fermentation is entirely in stainless steel, with no oak at any stage, so nothing softens or covers the fruit - the cool-climate Chardonnay comes through clean and direct. Expect crisp green apple and citrus, white flowers, and that distinctive crushed-shell minerality on a finish driven by bright, natural acidity. Serve well chilled, around 8-10°C.
