Cellar for up to 15 years. Decanting is optional, up to 30 minutes before serving. Those at Domaine Jessiaume have been creators and purveyors of top-quality Burgundy wine for almost two centuries. The stalwart winery was founded in 1850 by the Jessiaume family and has since been acquired by Dr Jean-François Le Bigot, who has steered the cellar into a new era of minimal intervention viticulture. Domaine Jessiaume has its fingers in many of the finest pies across the Côte de Beaune. The winery is the largest owner of the “Les Gravières” Premier Cru vineyard in Santenay, with over 3.8 hectares of fertile, mineral-rich soil to harvest from. Numerus Clausus (“closed number” in Latin) is crafted in limited amounts, from the oldest vines in Les Gravières. 80 years of previous experience grants this wine an incredibly nuanced character. There is a deep well of earthy scents to be discovered on the nose, along with pleasant notes of wild hedgerow berries, including blackberry and raspberry. It’s a perfect balance of rich body and wiry acidity in the mouth, with a long, powerful finish. As the wine opens up, you can also discover notes of menthol, liquorice, herbs and minerals. Pair it with a slice of aged cheese, braised beef, or a rich and herby roast lamb dish.
