Strategically located in Meursault, in the heart of the Côte de Beaune, the Patrick Javilier estate is a family-run winery that produces excellent Burgundy white and red wines from approximately 11 hectares of vineyards spread across the Bourgogne, Village, Premier Cru, and Grand Cru appellations. The estate, founded in 1945, is now managed by Marion Javillier, the third generation of the family, with the help of her brother-in-law, Pierre-Emmanuel Lamy. The Chardonnay grapes are sourced from the estate's vineyards located in the Bourgogne Côte d'Or appellation, not far from Puligny-Montrachet, and planted on Oligocene marl and limestone soils (hence the name of the cuvée). After vinification, the finished wine ages in oak (a quarter of which is new). The result is a balanced and youthful wine that beautifully expresses the elegance of Burgundy white wines. On the nose, Bourgogne Côte d'Or Cuvée Oligocene reveals a broad and lively aromatic profile with subtle notes of citrus and white fruit, followed by hints of white flowers and a delicate mineral touch on the finish. On the palate, it is taut, energetic, and linear, with a distinctive minerality and well-balanced acidity. The finish is long and citrusy. It pairs excellently with seafood and shellfish. Try it especially with spaghetti with clams or grilled cuttlefish.
