Drink it now or cellar for up to 10 years. No need to decant but best to open it half an hour before service. Domaine Seguin-Manuel has a long tradition spanning approximately 200 years. It was acquired in 2004 by Thibaut Marion, who expanded production and converted the vineyards to organic farming. The estate, based in Beaune, the capital of the Burgundy wine region, now covers just under 9 hectares of vineyards. The Pinot Noir grapes are sourced from a vineyard over 40 years old, located halfway up the slope, on soils of clay, iron oxide, limestone, and flat stones, with a southern exposure. The selection and harvest in the vineyard are manual, and after fermentation, the finished wine ages for 12 months in oak before bottling. The Domaine Seguin-Manuel Savigny les Beaune Premier Cru Les Lavieres is an expressive and fragrant wine that reveals aromas of strawberry, cherry, and small berries against a background of woody notes. On the palate, it is velvety and medium-bodied, with fruity notes and a balanced profile, complemented by smooth tannins and a pleasant minerality that lingers on the long finish. It is an elegant Burgundy red that can age for a few years in the cellar or be enjoyed now with veal escalopes or stuffed guinea fowl breast.
