Fernando de Castilla Fino en Rama is a fino Sherry from the Jerez region of Spain. Bodegas Rey Fernando de Castillo was founded in the 1960s but was purchased and revamped in 1999 to become one of the most interesting and highest quality bodegas in the Jerez DO. En Rama indicates that this fino was unfiltered – offering greater complexity and texture than would otherwise be possible. This is a benchmark fino en rama with apple, chamomile, almond and yeast aromas, followed by nutty, savoury notes on the palate and a salty tang on the finish. Try with salted almonds or Iberico ham.
