Georges Laval Les Longues Violes Brut Nature 2015 is a parcel-only Champagne produced from extremely old vines in the Premier Cru village of Cumières. This rare cuvée comes from a 0.14-hectare plot of Pinot Noir and Pinot Meunier planted in 1947, 1964 and 1984 on soils of chalk and clay. The 2015 growing season provided the warmth necessary for the biodynamically farmed fruit to reach full maturity, allowing Vincent Laval to bottle this without any dosage. Spontaneous fermentation and ageing took place in used oak barrels for nearly five years before disgorgement. The resulting wine is concentrated, showing notes of bruised apple, toasted hazelnuts and a profound, salt-flecked minerality.
