Bodega Guímaro was founded in the early 90s by the Rodriguez family, even before the creation of the D.O. Ribeira Sacra. In 2001, Raul Perez joined the company as a consultant, introducing new techniques and a more natural approach to production. The name Guimaro, which means rebel in the Galician dialect, is a tribute to Pedro Rodriguez's grandfather. This elegant red from Ribeira Sacra is a blend of Mencia, Merenzao, Brancellao, and Sousón. The grapes come from vineyards with an average age of over 50 years, planted on different soils, and located in the Amandi subzone in Ribeira Sacra. After manual harvesting and spontaneous fermentation in oak truncated cone-shaped vats, the must is left to macerate for approximately 45 days. The finished wine ages in foudre and oak barrels for 8 months. Camino Real, whose name is inspired by the road once used by the royals to go from Doado to Castro Candelas, is a red with a fresh and complex aromatic profile. On the nose, it reveals fragrant floral and fruity notes and hints of wild herbs. On the palate, it is fresh and fruity, juicy and balanced. It has a well-balanced acidity and soft tannins. The finish is long and refreshing. It is excellent with ratatouille, chicken parmesan, and pasta amatriciana.
