Born in Germany, Wolber worked at the wineries Rudolph Trossen in the Mosel and Jean-Marc Dreyer in Alsace before apprenticing for Jean-François Ganevat in the Jura. Now working with Jean-Yves Bizot in Burgundy, he produces his own wines from multiple French regions through his négociant label. Wolber likes to use semi or full carbonic maceration for his wines as well as sourcing grapes from organic or biodynamic vineyards. Every process of winemaking is monitored using low-intervention methods. The Pinot Noir spends around a year in used barrels before being bottled without fining and filtering and with no SO2 additions.
