Founded about 30 years ago, the Ilatium Morini winery is a family-run business located in Mezzane di Sotto, in the province of Verona. Here, in the heart of Valpolicella, viticulture dates back to the time of the ancient Romans, once called 'latii' by the locals. And it is precisely these ancient origins that inspire the name of the company, today led by 7 brothers and cousins. The wine is a blend of Corvina, Corvinone, Rondinella, Croatina and Oseleta, coming from vineyards located over 200 meters above sea level, on limestone soils. After drying, in January the grapes are left to macerate for 20-30 days. Fermentation takes place at a controlled temperature to guarantee the full aromatic expression of the grapes. The finished wine is then aged in a mix of French and American oak and then for another 8-10 months in the bottle. The wine reveals a clear and intense color with ruby red tones. On the nose it is fragrant with aromas of ripe red fruits and notes of spices and cocoa. On the palate it is rich and soft with ripe and well integrated tannins. It has a good body and a long, warm finish. It pairs perfectly with a fine, juicy steak.
