La Chablisienne, a cooperative of 300 producers with 1,200 hectares covering all levels from Petit-Chablis to Grand Cru vineyards, was established in the town of Chablis way back in 1923 at the initiative of Abbé Balitrand. Château Grenouilles is also now a property of La Chablisienne, since 1999. The Chardonnay grapes are picked from the Grand Cru Les Clos, right by the Serein River. Here, the vines have an average age of thirty years and can benefit from a south-west exposure and clay-limestone soils of the Kimmeridgian. They get some cold decanting before they hit the barrels for some fermentation action. Then, they are left on the lees for a full 14 months. The Chablis Grand Cru Les Clos de La Chablisienne reveals a bright color with pale golden tones. Its aromatic profile is elegant and fragrant. On the nose, it shows fruity notes of Granny Smith apple, pear, and grapefruit then floral notes of acacia and some slightly spicy nuances. On the palate, it is rich and intense, fruity and juicy with a marked mineral vein and a pleasant creaminess. The finish is long and reveals toasted notes. It pairs perfectly with roasted fish (for example sea bass) but it is exceptional with white meat and in particular rabbit.
