The Cabernet Sauvignon grapes are sourced from old vines in Parcelle 8 of the Clos Apalta vineyard in the Apalta Valley. After manual harvesting and temperature-controlled fermentation in French oak vats, the finished wine ages in oak barrels (75% new) for 20 months before bottling unfiltered.
