Drink it now or cellar for up to 20 years. It is recommended to decant it for an hour. Cherubino Wines was founded in 2004 by Larry Cherubino and his wife, Edwina. The winery is located in the Margaret River wine region of Australia. It boasts over 120 hectares of vineyards, producing highly elegant wines that are widely acclaimed by both the public and critics. Among its various wine ranges, Cherubino includes the company's most iconic wines, crafted with grapes from the finest plots. The Cabernet Sauvignon grapes come from Block 6 of the Riversdale Estate, in the Frankland River region, renowned for its exceptional quality. After manual harvesting and fermentation with native yeasts, the wine ages in oak barrels. The result is a powerful and concentrated wine with a broad and complex aromatic profile. On the nose, the wine reveals notes of red and black fruits (plum, blackberry, and other berries) with hints of violet, clove, and flint. On the palate, it is intense and fruity, deep and balanced with perfectly integrated tannins and a smooth texture. The finish is long and harmonious. This wine can age well for a couple of decades, but if you can't wait, try it with red meat. It's perfect with filet mignon, beef stew, and braised beef cheek.
