Cellar for 10 years or more. Decanting is optional, for up to 30 minutes before serving. This is a medium-bodied Pinot Noir from Burgundy, an elevated, highly drinkable wine with scents of blackberry, raspberry, forest floor, warm spice, and herby garrigue hints. A gorgeous deep purple in the glass, it was sourced from 8 different Premier Cru vineyards, sourced through a network of grape growers – just one of the aspects that makes Laurent Ponsot unique among his peers. Following almost four decades at Domaine Ponsot, Laurent Ponsot started a new company under his own name in 2017, with the help of his son, Clémente. It is far from being a traditional winery – although Laurent Ponsot owns 7 hectares of vineyards in Meursault, he also plays the role of “negociant”, assembling wines from a variety of different growers. The winery aims to create avant-garde wines, and uses packaging infused with ground-breaking technology, bringing the concept of "Haute Couture" wine to the world stage. Cuvée Du Noyer is vibrant and pure in the mouth, loaded with flavours of red currant, raspberry, Christmas spices, mushroom, and dried herbs. It wraps the tongue in wiry acidity, and the tannins are firm, allowing it to evolve further in the cellar. This is a great Burgundy for pairing with turkey, tomato-based stews, or a mushroom risotto.
