Founded by Louis Henri Denis Jadot in 1859 in Beaune, in the heart of Burgundy, Maison Louis Jadot is one of the region's historic estates and owns plots in some of the most prestigious crus. After being acquired in the 1980s by Rudy Kopf's family, the company has been run by the Gagey family since the 1990s. Today, General Manager Thibaut Gagey leads a large team of professionals who produce some of Burgundy's finest wines. Couvent des Jacobins Bourgogne Blanc is produced with Chardonnay grapes sourced from parcels located in the Côte d'Or, Côte Chalonnaise, and Viré-Clessé regions. After harvest and fermentation, the finished wine ages for 8-10 months, half in oak barrels and half in stainless steel tanks. This process ensures a perfect balance between fruity and fresh aromas and the enhanced roundness provided by the oak aging. In the glass, the wine reveals a bright yellow color with light greenish highlights. Its aromatic profile is broad and harmonious, with notes of ripe white fruit and floral hints on a delicate oaky background. On the palate, it is medium-intense, smooth, and fresh. It has good structure and a lively, well-integrated acidity. The finish is long and juicy. It is excellent as an elegant aperitif and pairs well with fish, seafood, and white meat. It is also worth trying with goat cheeses.
