Founded in 2002, the Spanish winery Matsu is part of the Vintae wine group, which initially originated in Rioja and now owns estates across the country. The name Matsu derives from the Japanese word meaning "to wait," indicating a focus on artisanal wine production that allows nature to take its course. The winery selects its grapes from high-quality, very old vineyards located in the Toro wine region. The native Tinta de Toro grapes are sourced from centuries-old vines grown with low yields and cultivation methods close to biodynamic. The vineyard is located at an altitude of approximately 650-700 meters on clay and sandstone soils. After harvest, fermentation takes place in large concrete vats, and the finished wine ages for approximately 16 months in new barriques. In the glass, the wine reveals an intense, deep purple-red color. Its aromatic profile is broad and ripe, with notes of dark fruit, Mediterranean herbs, and dried figs, set against a delicate undertone of coffee. On the palate, it is rich and powerful, characterful and rounded, with smooth tannins and well-balanced acidity. The finish is long and concentrated, evoking smoky and balsamic notes. It pairs deliciously with herb-roasted lamb or tagliatelle with wild boar.
