Merchant says
Today that sweetness matches with venison, but if 10 years, I'd be pairing this with a grouse or even a pheasant." Very deep, youthful colour and intense almost purple hue.

Merchant's description

The wine is aged for 21 months in 70 percent new French Nevers oak, 30 percent second fill Nevers and Alliers barrels Deep in colour with a purple hue Aromas of red plums, some floral notes, cedar and sweet spice Joe Fattorini's Tasting Note: "I have a real soft spot for Rubicon, a left-bank Bordeaux blend of Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. This is still very young and the purple hue and bright fruit will withdraw, replaced by tobacco and cedar and a russet tinge. Today that sweetness matches with venison, but if 10 years, I'd be pairing this with a grouse or even a pheasant." Very deep, youthful colour and intense almost purple hue. Very classic Rubicon nose with violets, ripe plum, cedar wood and intense spiciness. A typical liquorice note also evident on the nose. Still young and intense, promising further maturation potential. The palate is full bodied, structured but packed with fresh dark fruit and rounded, linear tannins
