Drink it now or cellar for up to 10 years. It is recommended to decant it for half an hour. Mitolo is an Australian winery founded in 1999 by Frank Mitolo, the heir to a family of Italian immigrants who arrived in the country in the 1950s. Mitolo Cinquecento is a red wine made with Sangiovese grapes from 500-meter-long rows (Cinquecento means "five hundred" in Italian) located in the Lopresti Vineyard Lot 11 in Whites Valley, in the southern part of McLaren Vale. Here, the black Biscay clay soils with limestone deposits and the coastal location, with sea breezes that mitigate the daytime heat, favor slow ripening and highly concentrated grapes. After two-stage harvesting and temperature-controlled fermentation in open vats, the finished wine ages for 15 months in used hogshead oak barrels (95% French and 5% American). The result is an expressive and lively wine that pays homage to the Mitolo family's Italian roots, showcasing the character of the Sangiovese grape and the unique terroir of McLaren Vale. In the glass, the wine reveals an intense ruby red color. Its aromatic profile opens with notes of juicy red fruits, interspersed with hints of aromatic herbs and spices. On the palate, it has a medium body and a silky texture. It is elegant and balanced, with a succulent, refreshing acidity and soft tannins. The finish is long and persistent. Try it with pasta Amatriciana, pizza Diavola, or roast suckling pig.
